Chose dates and Californian plums with their kernel, they are tastier!
Alternatively to the sugar, you can try to add some honey. The taste will be a little bit different, but nice as well.

It is a dessert that you can easily match with a sweet Italian wine, like a “Lipari Moscato” or a “Pantelleria Passito”

Preparing the filling

  1. Beat the Elda Ricotta in a bowl with a wooden spoon;
  2. Add the cream, the sugar, the cinnamon and the rum. Whip the mixture for about 5 minutes.

Preparing dates and plums

  1. Cut the dates and the plums in a half and remove their core;
  2. Fill every half with the cream you have obtained with a sac à poche;
  3. Garnish with a walnut kernel.
