A perfect recipe for the autumn season to combine with a glass of Recioto di Soave.

Method

For the pears

  1. Cut the pears in half and remove the core.
  2. Place the pears in a vacuum bag with 20g of recioto wine and a spoon of moscovado sugar.
  3. Cook at 84 ºC for 40 minutes.

For Mascarpone mousse

  1. Place the mixture of mascarpone, milk cream and sugar in a small siphon and load it with a charge.
  2. Remove the pears from the bag, dry and keep the cooking liquid apart.
  3. Put the pears on a dish and decorate with mascarpone mousse.
  4. Garnish with cinnamon to taste.
