For the pears

Cut the pears in half and remove the core.

Place the pears in a vacuum bag with 20g of recioto wine and a spoon of moscovado sugar.

Cook at 84 ºC for 40 minutes.
For Mascarpone mousse

Place the mixture of mascarpone, milk cream and sugar in a small siphon and load it with a charge.

Remove the pears from the bag, dry and keep the cooking liquid apart.

Put the pears on a dish and decorate with mascarpone mousse.

Garnish with cinnamon to taste.
